Overnight French Toast (VG)

A quick - no bake nutritious and complex #breakfast fix! Prepare the mixture and the toasts the night before, morning comes just throw the prepared toasts into a pan, get them nice and crunchy and VOILÀ!

Being a big breakfast person I always try to be creative with my day’s firs meal. And yes, indeed I breakfast like a queen! Not only healthy, filling and nutritious breakfast will set you up for a good day, there is a chance it will also improve your mood!!!!

How? It's been proved that complex carbohydrates can make you happier thanks to the #serotonin (a neurotransmitters like dopamine) being better distributed to your brain. Serotonin* can improve your #mood, concentration and overall #health.
Overnight French Toast (VG)
Vegan French Toast

Makes 2 servings


Preparation time: 10 min

Resting time: overnight or at least 2 hours

Cooking time: 15 min


INGREDIENTS:

  • 1 frozen banana

  • 4 dates

  • 1 cup of soy milk (or any plant-based alternative)

  • 1 tbls flaxseeds

  • 1 egg replacement (I used Orgran No Egg - Egg Replacer)

  • coconut oil

  • 1 tbls raw hemp protein

  • 4 slices of Rye bread (or any bread for your choice)

+ dash of: cinnamon, cardamon, nutmeg and white pepper

* for extra protein fix add a scoop of raw hemp protein + little more soya milk


I used rye bread as its more solid but wholewheat would also do. If you don't have time for the overnight thing, try more lighter types of bread that will soak the 'egg' butter faster and add more plan based milk if needed.

cocoa nibs

coconut yogurt

chia seeds

sunflower seed butter

vegan hazelnut chocolate spread

fresh berries | freeze-dried berries

date | maple syrup

and MORE cinnamon

LET's DO THIS: 

Throw the banana, dates, soy milk, flaxseeds to a blender blend until it forms a thick ‘egg’ like mixture. Then add the egg replacement (made according to instructions) into the mixture. Slice your fresh bread, and lie the slices into a big enough tupperware so that you are not layering and the bread slices are not overlapping. Pour over the prepared ‘egg’ mixture, cover and let sit overnight or for at least 2 hours.


In the morning, heat up a little coconut oil in a non-stick frying pan. When steamy hot, using a spatula transform 2 slices of your sweetly soaked bread into the pan. Let it fry-cook for about 5 minutes on each side, adding coconut oil as desired. Once the bread is nicely golden brown and formed a little crust, transform it into a prepared plate. Decorate with whatever the house has on offer and enjoy!!!

* #Serotonin is a neurotransmitter which isproduced and spread by neurones in the brain. Lack or low distribution of serotonin to the brain is linked to depression. 


Serotonin helps us feel relaxed, happy, and confident. The best serotonin sources are complex carbs such as sweet potatoes, apples, blueberries, carrots, and chickpeas.


#Fibre

Getting enough fibre in the morning will not only keep you regular (YAY!), but it will also slow down your digestion so you’ll feel fuller longer (double YAY)

They are a great source of energy and probably the best source of natural sugar. They contain iron, fibre, vitamin A, potassium, B-vitamins, tannins - and many more. Dates can be considered one of the healthiest foods in the world.
