Tropical Pink Pitaya Smoothie Bowl (VG + R + GF)

Pink Pitaya Powder has a sweet tropical flavour and is packed with vitamins and minerals. Especially vitamin C; vitamin B1, B2, and B3, iron, calcium, magnesium, carotene, lycopene and Omega-3 & Omega-6 fatty acids. It is also rich in fibre and is low in fat.


I love the taste of it! I could eat it with a spoon just how delicious this pretty pink goodness it. I get mine from Hybrid Herbs because they do not use any additives or artificial sweeteners. Their products are 100% pure, natural & vegan!
Easy vegan gluten-free pancakes

Makes: 1 bowl

Preparation time: 10 min


INGREDIENTS:

  • 1 frozen banana

  • 1/2 cup mango (fresh or frozen)

  • 2-3 tsp of Pink Pitaya Powder

  • 3 tbs plain coconut yogurt

  • 2 cubes of ice

  • 1 tbsp of cashew butter

  • coconut milk


TOPPINGS:

  • unsweetened granola

  • coconut shavings

  • shredded coconut

  • mango

  • raspberries

  • raw cashews

LET's DO THIS


I always have some bananas in the freezer, being a vegan it's definitely a must! You can make this smoothie just fine with fresh fruit too.


Place all the ingredients into a blended with a splash of coconut milk (you can keep adding milk depending on your thickness preference) and blend until completely blended and smooth sort of fluffy.


Fill your favourite bowls with the pink smoothie, and top with fresh fruit, coconut, nuts or anything you fancy today
