Savoury Chickpea Pancake (VG + GF)

I love chickpeas (like most vegans do), in the vegan world chickpeas are something like avocados. You can use them for deserts, you can make falafel, you can eat them raw, cooked or baked. The liquid (aguafaba) from chickpeas can be used as an egg white in deserts and dishes. Not to mention, using chickpeas in dishes adds a soothing, filling - comfort-food-like feeling.

Chickpeas are most definitely a superfood and an excellent vegan and gluten-free source of protein and fiber. They contain high levels of iron, vitamin B-6, and magnesium, moreover vitamin K, folate, phosphorus, zinc, copper, manganese, choline, and selenium.

Superfood Bean & Quinoa Salad

MAKES: 1 serving

Preparation time: 15 minutes

INGREDIENTS:

  • 1/2 cup Chickpea flour (garbanzo flour)

  • 1/2 cup + 2 tbsp Water

  • 1 Garlic clove, crushed

  • 1/4 tsp Baking powder

  • 1/2 tsp of Turmeric (curcuma)

  • Coconut Oil (for frying)

  • Fresh chive


Pinch of:

  • Pink Himalayan salt

  • Black pepper

  • Cayenne red pepper

Filling:

  • Raw salad using any vegetables you fancy!


Toppings:

  • Plant based sour cream

  • Sprouts

  • Curry Mustard

  • Fresh Coriander

LET's DO THIS: 

Preheat a a non-stick frying pan over medium heat.


In a small bowl, whisk together the chickpea flour, garlic, salt, pepper, baking powder, turmeric and chives and cayenne pepper if you wish to spice up your life. If the batter is too thick add a little water - the consistency should be similar to normal pancake butter.


Add the water and whisk until you create some air bubbles and the batter is well combined.

Once your prepared pan is hot enough, pour in half of the batter to make 1 pancake and quickly spread it out all over the pan. Cook for about 5-6 minutes on one side, then using a spatula, flip the pancake over. Flip pancake carefully and cook for another 5-6 minutes, until nicely golden.


When ready, place your pancake on a plate, placing your choice of vegetable on a half of the pancake, topping with the vegan sour cream and/ or curry mustard and fold the pancake over. And ENJOY!

Are super high in insoluble fiber (nearly 75%) which means that they remain undigested until they reach your colon, (let's put it simple) to help you poop regulary.


Chickpeas also reduce cholesterol, are high in protein that helps rebuild muscle tissue, and compare to other legumes chickpeas have a higher amount of tryptophan:

~ tryptophan is an essential amino acid that helps to regulate sleep and emotions.


Did you know? Among legumes, chickpeas are the easiest to digest.
