Easy Vegan 'French' Toast (VG)

Weekends are made for lazy mornings and filling breakfast in bed. Do you agree?


Yes, filling - because the good carbs can be your friend. The amount of information about carbohydrates available out there is confusing. Which are good and which are bad?


Carbs contain no more calories than any other macronutrients (fat 9 calories per 1g, protein 4 calories per 1g, carbs 4calories per 1g). A similar approach that applies to fat fits here, it’s important to know which carbohydrates are beneficial to our health.

The best sources of carbs are unprocessed whole grains, fruits and vegetables. White bread, highly processed foods and pastries are unhealthy sources of carbs that can contribute to weight gain and health problems.
Easy Vegan Healthy French Toast

Makes 2 servings


Preparation time: 5 min

Cooking time: 15 min


INGREDIENTS:

  • 1 cup almond milk (or any plant-based alternative)

  • 4 tbsp Chickpea Flour

  • 1 tbls flaxseeds

  • 1 tbsp maple syrup

  • 4 slices of sprouted wholegrain bread

  • pinch of salt

  • coconut oil (for frying)

  • cinnamon

+ optional dash of: cardamon and nutmeg


TOPPINGS (optional):

  • cocoa nibs

  • coconut yogurt

  • chia seeds

  • sunflower seed butter

  • fresh fruit (berries, banana...)

  • date | maple syrup

  • and flowers of course!



LET's DO THIS: 

1. Whisk together the almond milk, chickpea flour, flaxseeds, maple syrup and cinnamon. Let the mix sit for five minutes. In the mean time, prepare you bread slices and heat up a little bit of coconut oil in a frying pan.

2. Soak a slice of bread in the chickpea batter for a few seconds on each side, and then place onto the frying pan. Cook until golden brown the flip to the other side to achieve the same colour tone.


3. THAT'S IT! Super simple - serve you toasties warm, topped with anything you feel like! My go to are nut butter, fresh berries and maple syrup.


*For this particular recipe I mixed a little bit of Laird's Superfoods Turmeric Creamer (cos that shit is good and I'm obsessed) with vegan protein powder and almond milk to substitute coconut yogurt as I ran out of. It added a nice yellow colour to the dish and spiced up the flavour.
