Easy 3-ingredient Banana Pancakes (VG + GF)

Who doesn't love pancakes right?! EVERYBODY does! The sad thing is that they are probably not the healthier thing for you to eat vey often. SO I put together this 3 ingredient - supper easy recipe AND pretty healthy too!

Oats are an amazing gluten-free whole grain, that is also a great source of important vitamins, minerals, fiber and antioxidants.
Easy vegan gluten-free pancakes

Makes 6-7 small pancakes

Preparation time: overnight (or 2 hours) + 10 min preparation


  • 1/2 cup rolled oats

  • 1 medium banana

  • 3 1/2 tbsp coconut milk (or any plant based milk of your choice)

  • coconut oil (used for frying)

+ any toppings of your choice

My choice:

  • fresh berries

  • banana

  • cocoa nibs

  • coconut shavings

  • maple syrup

  • PURE NUTS smooth peanut butter


Easy vegan gluten-free pancakes


Put all the ingredients except the coconut oil into a blender, and blend until smooth. You can also add some cinnamon here. Meanwhile heat up a little coconut oil in a non-stick pan to melt.

Once the pan is hot enough pour some batter into the pan to make the pancakes. As soon as the pancake is cooked enough, flip the pancake over and cook on the other side for a little longer. Continue until all the pancake butter is gone.

To serve top up with anything & everything you fancy! Enjoy!!!
