Chia Pudding with Sweet Apple (VG + GF)

Cinnamon is often used to enhance the bioavailability of other herbs. This bowl of deliciousness is a perfect combination of warm and cold elements.

Despite their tinny size - chia seeds are super rich in important nutrients.
Chia Pudding with Sweet Apple

Makes 2 servings

Preparation time: overnight (or 2 hours) + 10 min preparation


INGREDIENTS:

CHIA PUDDING

  • 1/2 cup coconut milk

  • 1/2 cup water

  • 3 tbsp Chia Seeds

  • 1/4 teaspoon cinnamon

  • 1/2 cup coconut yogurt

FOR TOPPINGS

  • 1 tsp maple syrup

  • 1/2 apple

  • 1 tbsp raisins

  • 1 tsp coconut oil

  • handful of unsweetened GF apple & cinnamon granola

  • pinch of black pepper

Chia Pudding with Sweet Apple

LET's DO THIS: 


Throw the chia seeds, water, coconut milk and cinnamon into a bowl or a jar and let i sit over night or at least 2 hours.


In the morning add the coconut yogurt to the chia pudding, mix well and let sit for a few more minutes.

Meanwhile heat up a little coconut oil and

maple syrup in a non-stick pan. Slice the apple and when the oil is melted and combined with the maple syrup add the sliced apples and cook for a few minutes until golden and soft.


Serve with unsweetened apple granola, raisins and the maple apples, and sprinkle with cinnamon!
