Avocado Superfood Burger (VG + GF)

I didn't used to like avocados - I cannot really explain why, but I think I found them 'too rich' and 'too creamy' to my liking. But only until I discovered the numerous uses and benefits of avocados. Nowadays, a day won't pass without me having this strange green deliciousness included in one of my meals!
Avocados are a nutrient-dense (believe it or not) fruit that contains lots of vitamins and minerals. Avocados can improve your heart's function and support the digestive health, skin, hair and eyes.

MAKES: 2 serving
Preparation time: 20 minutes
Cooking time: 10 minutes
TOTAL = 30 min
INGREDIENTS:
1 Avocado
2 slice of GF Bread
1 small Leek
1/2 yellow Onion
Maple syrup
2 veggie burgers of your choice (mine was quinoa burger)
2 slices of vegan Cheese
1 Tomato
handful of Alfa Alfa Sprouts
6 Mushrooms
1 Garlic clove
1 tsp parsley
Olive oil
Pink Himalayan Salt to taste
Optional:
homemade black bean hummus
homemade tahini dressing

LET's DO THIS:
For the mushrooms: pre-heat some coconut oil in a non-stick pan, add crushed garlic and let sauté for 3 minutes. Meanwhile slice the mushrooms, and then add them to the pan with some parsley. Sauté for 5 minutes of more.
For the onions: pre-heat some coconut oil in a non-stick pan and meanwhile slice the leeks and onion, then add them to the pan when the oil is hot. Add a little drizzle or maple syrup and sauté until soft and brown.
For the homemade black-bean hummus: blend together cooked (or from a jar) black beans, tahini, garlic, lemon, salt, black pepper, garlic and dark chocolate in a blender.
for the tahini dressing: whisk together some tahini, water, unsweetened plant based milk or plain yogurt, lemon, nutritional yeast, salt and black pepper.
Layer and serve as shown on the pictures or as ever you wish!

Is high in fat but has NO cholesterol! These avocado's healthy fats (essential Omega 3's and 6's) are necessary for a healthy metabolism and they also help to lubricate the intestines, moisten dry lungs, soothe the joints, moisturise dry hair, skin and nails. Moreover avocados are packed with vitamins, minerals and even complete proteins.

Mushroom
Mushrooms have an earthy taste, hence they have the ability to keep you grounded as well as to calm your nervous system. In Ayurveda mushrooms are considered tamasic (meaning they make your consciousness sleepy).
Did you know? Raw mushrooms are almost indigestible. I suggest you always cook your mushrooms before eating them.
